50th Anniversary Slide Show

Chris's parents will celebrate their big golden 50th wedding anniversary on June 6th. On June 7th all of his siblings are helping throw an "open house" party to celebrate. The past couple of days we have been busy scanning tons of photos for a slide show for the party. We are also making one without the music so we can have a longer viewing time of the pictures.

Boy, are we fortunate to have a nephew a few years older than Matthew. Aunt Sue brought over even more of Ian's toys for Matthew. He has fun with the lawn mower, and is crazy over the Little Tikes car. Thanks again!!

We had an impromptu playdate at our house this past Wednesday when the weather was so nice. Matthew and his friends enjoyed it.

We set up the slide to go into the new kiddie pool for Matthew. The water was too cold the first day for him, but you can tell he's gonna like it!

Pork Lettuce Wraps

This recipe is so simple and easy, yet soooo good! Thanks Carla for a great recipe. We all enjoyed them.

Pork Lettuce Wraps

1 pork roast, cook in a crock pot on low for 7 hrs. (I added 1/4 cup of water)
Teriyaki sauce (I used Kikkoman roasted-garlic teriyaki)
Boston or bib lettuce
Chopped green onions
Chopped cilantro
Shredded raw carrot
Toasted sliced almonds

Shred the cooked pork and add the teriyaki sauce to taste. Place pork in lettuce "cups", and add the various toppings.

Greek Turkey Burgers


Made some good Greek turkey burgers this past week. They are filled with lots of spinach, garlic, yogurt, red bell pepper, and of course tons of feta cheese! I must be on a mediterranean kick lately.

High Chair Sleeping


Here is Matthew fast asleep in his high chair after church this past Sunday. Apparently a couple hours in the nursery playing, and a quick trip to the grocery store after church was enough to knock him out. He woke up after a 5 minute power nap, ate lunch, then went down for a good nap an hour later!

Being Naughty at the Shower

Matthew found the veggie pizza on the kitchen table and "helped" himself. It went everywhere on the floor. I guess one year olds will be one year olds. It provided a good laugh at least. Thanks Arianna for being so gracious!

My friend Emily is having her second girl, Hannah, next month. Tonight I helped with the food at her shower. Matthew went with me since Chris was at work. We had a great time.

New Hat


I scored big time this week on cute boy clothes for Matthew. My friend Jodi has two boys 5 and 3, and is having a garage sale this week. I went over Tuesday evening for a "preview" sale. This cute hat for fall is one of the many items. Matthew had a good time putting it on and off.

Greek Chicken Gyros


I made some yummy grilled greek chicken with tzatziki sauce this past week. I turned it into a chicken "gyros", by slicing it thinly on the bias, and adding the tzatziki sauce, red onion, kalamata olives, grape tomatoes, and feta cheese crumbles. The pita bread is also slightly grilled as well. Mmmmm....

Baby Clogs

Here is Matthew sporting his knock-off Crocs from Target. A shameful impulse buy since they were on sale...

Scaring Mommy to Death

Okay, so he will do much worse, but this is Matthew's new trick. Standing on his fire truck that is on wheels. This was taken this past Monday at play group at our house. I see a possible Emergency Room visit in the future if he keeps this up...

Dancing to The Office Theme

We recorded Thursday night's episode of The Office since we knew we were not going to be home in time to watch it. Matthew was standing in front of the TV when he started dancing to the opening. We got such a kick out of it that I ran to get the camera. We rewound the tape, and with a little coaxing from Chris, he started his baby dancing again...So funny!

In a Stepping Stool
