Sweet Potato Casserole

I got this yummy recipe from my friend Michelle that I know from my MOPS group. It was fantastic. The struesel topping definitely makes it. If your not a sweet potato fan, this one just might cure you of that. No joke!

Start with 4 large sweet potatoes, just look at those beauties! After you dice and boil them for 20 minutes, you mash them and add all the good stuff...


To make the streusel topping, mix the flour, brown sugar, salt, and cinnamon together, then "cut" the butter in with a pastry utensil. Next stir in the pecans and marshmallows. When you spread it on top of the sweet potatoes, add some more marshmallows for good measure. It's the right thing to do!


Mmmmm, just look at that pan full of yumminess!



Sweet Potato Casserole

4 large sweet potatoes, peeled & cubed
1/2 cup sugar
1/2 cup milk
1 egg, beaten
1/4 cup butter, melted
1 tsp. vanilla

Place sweet potatoes in large saucepan/pot. Cover with water, bring to boil, reduce heat and cook until tender, about 20 minutes. Drain. Place potatoes in bowl. Mash. Stir in milk, sugar, butter, egg, and vanilla until blended. Spread in a greased13x9 baking pan. Cover with streusel topping mix. Bake 350 degrees about 20 minutes or until marshmallows are golden, and casserole is bubbly.

Streusal Topping Recipe:

3/4 cup butter
3/4 cup light brown sugar
3/4 cup flour
1/4 tsp. ground cinnamon
1/4 tsp. salt

1 c. pecan pieces (or peanuts)
1 c. mini marshmallows

Mix flour, brown sugar, salt, and cinnamon. Cut in butter with pastry utensil. Fold in the pecans and marshmellows.
